Prović Winery: Wines that reflect the bounty of the Neretva Delta

The Prović Winery is located in Opuzen, Croatia, where the Neretva River forms the mouth of the river known as the Little Neretva. Founded in 1997 by brothers Branko and Mirko Prović, this family-run winery is known for producing wines that take advantage of the unique terroir of the Neretva Delta. The vineyards, located two kilometers from the mouth of the Little Neretva River, are located on flat land that was once the sea. The soil still contains fragments of seashells and is characterized by its rich mineral content. The alluvial soil carried by the Neretva River from the mountains of Herzegovina forms fertile humus, creating unique conditions similar to those of Bordeaux and the Rhine Valley. This makes the region ideal for growing grapes. Prović Winery cultivates Merlot, Cabernet Sauvignon, Yellow Muscat, and Chardonnay. Chardonnay, in particular, is the winery's signature wine, as it was the first variety to be cultivated in southern Croatia. Branko began making wine for his family in the 1980s, becoming a pioneer in Chardonnay cultivation in southern Croatia. The Chardonnay is hand-picked in the cool early morning hours of late August and carefully vinified through low-temperature fermentation. Some of the wine is aged in stainless steel tanks and some in small barrels in contact with the lees. It is full-bodied, has a pronounced minerality, and is characterized by the aroma of ripe fruit and a soft, buttery taste. The winery's philosophy is quality over quantity. We believe that the soul of the wine is shaped by the careful care, love and daily presence in the cellar. In the cellar attached to the family hotel "Merlot", you can enjoy wine tasting combined with the local culinary culture, and fully experience the charm of Neretva. The Mediterranean climate, with 2,700 hours of sunshine per year, dry, hot summers and mild, rainy winters, ensures ideal ripening for the grapes.
